Sun International is proud to welcome Nicolas Smalberger as the new Executive Chef at The Palace of the Lost City, a member of the Leading Hotels of the World. Chef Smalberger returns to Sun International after a year consulting with Michelin Star Chef, Conrad Gallagher.
Prior to his consulting work he was the Executive Chef at the prestigious Table Bay Hotel in Cape Town from March 2007 to March 2008. Subsequent to this position, Smalberger was the Assistant Group Executive Chef for three years, overseeing the Food and Beverage operations at 15 Sun International resorts.
Smalberger was destined to make a name for himself as an international chef since he started rolling pizza dough at the age of 14. Since then he has worked in luxurious hotels, cooked for international dignitaries, and participated in food festivals around the world. “My cooking philosophy is to produce modern simplistic dishes that require quality local produce. I favor contemporary Mediterranean cuisine, but am often influenced by different inter-national cultures. I have a passion for new flavors and because of this, I am driven to create new recipes,” says Smalberger.
The Palace of the Lost City is nestled in the rolling hills of the Pilanesberg region, one of South Africa’s most scenic locations.
